1 c. oil
3 c. sugar
4 eggs
2 cups “punkin”
1 tsp. vinegar
2/3 cup water
3 1/2 cups flour
1 tsp. salt
1 1/2 tsp. cinnamon
2 tsp. baking soda
1 c. nuts (optional)
Mix all wet ingredients. Combine dry ingredients and add to first mixture and mix until well blended. Bake at 350 degrees for 15 minutes for muffins and 1 hour for bread.

Trick-or-Treat Bars
1 1/2 cups butter
1 1/2 cups brown sugar
2 cups oatmeal
2 cups flour
1/2 t. salt
2. tsp. baking soda
12 oz. pkg. caramels
4 T. butter
4 T. milk
14 oz. plain M&Ms
Whole cashews, optional
Cream butter and brown sugar. Mix together oatmeal, flour, salt and soda. Add this to creamed mixture. Put in a buttered 9 x 13 pan and bake at 350 degrees for 10 minutes. Melt caramels, 4 T. butter and milk. Pour over baked crust and sprinkle M&Ms and cashews on top of caramel mixture. Bake for 10 more minutes. Cool at least 30 minutes before cutting. Can use other candy besides M&Ms such as chopped up Snickers, Mars, Milky Ways, etc.

Mariposa French Toast
4 pieces Texas Toast
3 eggs
1/2 c milk
2 T sugar
1/4 t cinnamon
1/8 t nutmeg
1/8 t cardamom
syrup:
2 c brown sugar
splash of brandy
walnut pieces (optional)
spray cream
Direction: Cut bread in half, diagonally. In medium saucepan, melt brown sugar on low heat. When melted, add walnut pieces until candied.
In medium mixing bowl whisk eggs until smooth. Add other ingredients. Whisk together well, make sure to incorporate plenty of air into the egg mixture. In medium to large fry pan, coat bottom with oil, and turn heat to low. Pour egg mixture into flat bottomed bowl. Dip several pieces of bread into eggs, being sure to coat both sides. Place bread in pan and watch carefully. Turn when bottom is browned. Remove from pan when both sides are brown. Place on plate covered with paper towel to drain any grease.
Using slotted spoon, remove walnuts from sugar mixture and reserve. Keeping heat on low, pour a splash of brandy into sugar and stir vigorously. Remove from heat and pour immediately onto individual servings of french toast. Top with walnuts and spray cream.

French Toast
- 4 eggs
- 2/3 cup whole milk
- 1/3 cup flour
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 6 slices Texas toast thick bread
- 3 tablespoons butter
- powdered sugar
- butter
- syrup

Mix together the eggs, milk, flour, sugar, vanilla, salt& cinnamon.2
Heat a large skillet, or griddle.3
When the skillet is hot, add 1 tablespoon butter.4
If the butter smokes, your pan is too hot; turn down the heat.5
Dip each slice of bread into the batter for 30 seconds on each side.6
Let some of the batter drip off, then put in skillet.7
Cook each slice 1 1/2-2 minutes per side until each side is golden brown.8
Add more butter, if necessary, to cook all of the slices.9
To serve, put on plate, dust with powdered sugar. Serve with butter & hot syrup.

Chocolate Chip Cookies
1 c shortening
1 1/2 c sugar
3/4 c brown sugar
3 eggs
3+ c flour
1 1/2 t salt
1 1/2 t soda
3 t vanilla
1 pkg chocolate chips
Cream together shortening and sugars. Add eggs. Add 3 c flour. Add remaining dry ingredients. Add vanilla. Add chips. Add more flour if needed to obtain correct consistency. Drop by spoonfuls onto ungreased cookie sheet. Bake 11-12 minutes at 375 degrees.
